Blueberry cheesecake with almonds, a dessert without flour and without baking.
Today I celebrated my mother’s birthday. My mother is suffering from diabetes and has been very careful about what she eats for more than a year.
I wanted to make her a sweet surprise, but not very sweet, so that she could taste a little too, so I prepared a cheesecake for her.
Ingredients for Blueberry cheesecake with almonds, a dessert without flour and without baking:
300 g frozen blueberries
2 g agar
400 g creamy cottage cheese
200 ml liquid whipped cream
whipping cream stabilizer
2 tablespoons of powdered sugar
vanilla essence
a handful of fried and salted almonds
dates
figs
2 tablespoons of coconut milk
Preparation:
For this Blueberry cheesecake with almonds, a dessert without flour and without baking you have to use a form of cake with detachable walls.
Crush the almonds using a food processor with S-blade, then add 3 figs and 7 dates and mix a little more, adding the coconut milk.
Spread the above mixture in a compact layer, as a base layer for cheesecake.
Whip the cream with the powdered sugar and the stabilizer, using a mixer. Mix with the cottage cheese and vanilla essence.
Spread the layer of cheese and cream over the almonds layer.
Boil the blueberries and separate the fruit from the juice.
Spread a layer of blueberries over the layer of cheese.
Boil a cup of water in a kettle with 2 g of agar-agar and the juice left by the blueberries. Remove from the heat after 5 minutes and leave to cool for a few minutes.
Pour the agar over the blueberry layer and let it harden for a few minutes.
Decorate with fruits and candies.
Before unfolding the ring of the tray, remove the tray edges with a knife.

Dar atentie la cantitati, o lingurita de ceva bun nu a omorat pe nimeni, insa ai grija la numarul de portii si la cat de des te rasfeti."

"Incerc sa adopt un stil de viata cat mai sanatos, sa consum in fiecare zi legume, sa inlocuiesc din cand in cand proteinele animale cu cele vegetale si sa consum cat mai putini carbohidrati. Mananc in general disociat si tin fasting hipocaloric atunci cand simt ca pot incepe o cura de slabire."
