Ingredients:
200g digestive biscuits
80g coconut oil (butter)
1kg cottage cheese
3 eggs
2 tablespoons semolina
2-3 tablespoons of strawberry jam
- Crush the biscuits.
- Melt the butter or coconut oil.
- Pour the coconut oil over the crushed biscuits, put them in a form with removable walls, then press with the bottom of a glass to compact the biscuits.
- Beat the eggs and mix with cottage cheese, jam and semolina. Mix until smooth with a manual mixer.
- The cream obtained is poured over the layer of compacted biscuits. Put the form in the oven.
- You can decorate the cheesecake with fresh fruit, jam, gelatin or combinations of these ingredients.
We boiled some strawberries, mixed them with a vertical blender and at the end we added gelatin. We poured the mixture over the cheesecake, then put the form in the fridge for an hour.
