“Ravioli de Ricotta” in italian or “Coltunasi cu branza” in romanian, are the same food, Ricotta-filled pasta.
Pasta is cheap and handy in stores, but those prepared at home are of course much healthier. It’s not hard at all, I promise! Actually, it’s really fun!
Ingredients:
2 egg yolks
200 g all-purpose flour
salt
The original recipe for filling contain: egg, nutmeg, melted butter, grated parmesan, ricotta, basil, rosemary and oregano. Mihai used only ricotta in the pictures below.
Preparation:
Mound the flour on a bowl and create a well in the center. Place the egg yolks and salt in the center. Using a fork mix them together.
Knead by hand until all the ingredients are well combined and the dough is smooth and elastic, about 10 minutes.
Bring the dough together to form a ball and wrap tightly in plastic wrap. Transfer to the fridge and leave to rest for at least 1 hour
Roll the dough into sheets.
Cut squares with a dough knife with wavy edges. Put a teaspoon of ricotta in the center of each square.
Fold pasta sheet over the top and seal well, pushing out any air pockets.
Boil the dumplings
Serve the dumplings with cheese sauces or with yogurt for a healthier diet.

Suntem in 2020 si consumul de carne de pe planeta se pare ca a ajuns la niveluri record. Suntem mai multi si consumam mult mai multa hrana decat avem nevoie. Suntem sedentari si obezi dar apetitul este in continuare crescut. Ne permitem financiar si gasim pe piata mai mult decat avem nevoie.
Exista ingrijorari ca in viitor cererea de carne va fi mai mare decat oferta, iar carnea artificială, creata in laborator ar putea fi o solutie. Un lucru care astazi ne ingrozeste, peste 10 ani este posibil sa devina banalitate. Singapore a aprobat deja punerea pe piata a carnii artificiale.

Mihai
Mihai este un exemplu demn de urmat pentru oricine doreste un stil de viata sanatos. A reusit sa slabeasca 30 kg si sa se mentina (nu va mint!), nu urmeaza neaparat un regim disociat, dar mananca sanatos si a devenit sportiv de performanta. Desi cea mai mare parte a preparatelor sunt pregatite de el, are ajutoare de nadejde in sotia sa, Mihaela si in fiul sau de 5 ani, Damian. Regulile lui sunt:
"1. Nu imi refuz preparatele preferate, chiar daca au un continut caloric mai mare, dar am grija intotdeauna sa compensez cu activitati sportive.
2. Cea mai mare parte a meniurilor familiei mele sunt pregatite in casa."- spune Mihai
